About the product: Agrozimi sweet wheat trahana is made with finely stone-ground durum wheat which is simmered in fresh cow’s milk, sieved and naturally air-dried to maintain its nutritional value and one-of-a-kind flavor.
About the company: A 40-year-long history in Pella, Macedonia, Greece. In 1969, Ghiorgos Martavaltzoglou, an Asia Minor refugee, sets up a bakery in his home village, Aravissos, Giannitsa, where he makes bread and traditional pies. A few years later, in 1974, the second generation puts up a flour mill which grinds top-quality flour. In 1980, the modest mill grows into a traditional food cottage industry. In the years to come, consumers’ trust and a rapidly increasing demand spurred the company into expanding to include the production of pasta – hilopites (Greek egg noodles), flour trahana, couscous etc.
Instructions: Trahana is cooked as a thick soup by adding it to stock, water, or milk, and simmering. Alternatively, it may be fried and then cooked in only as much liquid as it will absorb. Besides soups, sweet wheat trahana is ideal for a fruit crumble pie, a quiche lorraine, a tomato pie, or a wholesome trahanotto (the traditional Greek version of risotto). A handful of sweet wheat trahana in a green bean or broccoli casserole turns it into a finger-licking, well-balanced meal.Add it to the rice mixture and it will take the classic stuffed peppers to the next level. A great filling in mixed-greens pies and poultry dishes lending them body and flavor.
